Each morning, Mrs. Weber wakes up at 5:30 a.m. sharp to prepare for work. She starts putting lunch plans together right away. As lunch comes to an end in the Dining Hall, Mrs. Weber spends some time jotting down future meal ideas before hurrying to prepare for dinner. In the evening, Mrs. Weber presents the next day’s meals to the kitchen team and gives helpful pointers to the chefs before returning home.
As executive chef, Mrs. Weber plans menus, writes cooking instructions, prepares ingredients, and communicates with suppliers. When colleagues are ill, Mrs. Weber always takes over the cooking. She said, “My favorite food to prepare is braised short ribs. Chicken parmesan is actually the most difficult to cook.”
Mrs. Weber loves organizing special event dinners, saying, “I enjoy the Thanksgiving meal the most, because I save all the stuff at the farm to make it a nice, local meal.”
Mrs. Weber tries to reach out to staff and students often for new ideas for menus. During the January Culture Week, for instance, the Dining Hall experimented with foods from different cultures every day, many of which were suggested by students.
Mrs. Weber loves to spend time with her family and friends. During holidays, she likes to travel to Lake George. She said, “It’s a tourist trap, but my grandchildren enjoy it.”
Mrs. Weber loves working with the Dining Hall team. She said, “That’s my favorite part of the job. They have a lot of heart and soul. The Dining Hall family is my second home.”
